Moms and non-moms alike can attest to the benefits of taking an extended break from the hustle and bustle of everyday life. But how many of us are guilty of working through what is supposed to be free time? I know I am!Thank goodness for Camp GetAway! This camp for grown-ups is located in the beautiful Southern California mountains and is a fun, relaxing, pampering casual retreat for women. Bonus: they make some fabulous meals using Cabot cheese!
Patti Londre (pictured), the "Fearless Leader" of Camp Getaway sent us some of her quick 'n' easy quiche recipe ideas that she used for one of the camp's many weekend retreats:
I planned quiches for Sunday brunch. It isn't easy coming up with foolproof recipes for high altitude, grownup foods (not hot dogs and pancakes) that women would love. Quiches are perfect, especially when I could use leftover ingredients from the previous days' meals - broccoli, chicken, tomatoes -- basically salad bar things.
Then, they weren't exactly "recipes," however. I did them by the seat of my Becky Home-Ecky Pants, but the general idea is:
Per each frozen pie shell, add 2 cups total of "stuff" plus 1 cup shredded cheese plus 3 eggs mixed with 3/4 cup whole milk, some spices. 400 degrees for an hour until knife into center came out clean. Sit for 10 minutes.
All three varieties received rave reviews, many gals had seconds. The combos of the "stuff" were:
- Drained diced tomatoes, drained sliced mushrooms + Pepper Jack DEEEEElicious
- Drained frozen, thawed spinach + sharp white cheddar + Italian spices
- Drained frozen broccoli, diced cooked chicken + 50% cheddar + ground black pepper
