Who doesn't love America's Test Kitchen? I guess they love Cabot, too, because they've recently re-published a 2005 episode featuring our 50% Reduced Fat Cheddar in a recipe for Lighter Mac and Cheese. We're pretty psyched about all this, and we agree with ATK that the recipe for a low-fat mac and cheese is worth sharing again -- especially since it's getting colder, and the desire for warm, yummy comfort food is growing exponentially (or so my very, very scientific self-tests have definitively concluded).
