Glorious cheese!

And with this post, I break myself of the anonymous-posting habit of writing in all-lower case, because, I'm less anonymous than before and need to put my professional writing hat on.
Costco always manages to turn me on to new and interesting things. A bulk tray of cabot 50% reduced-fat cheeses, including cheddar, pepper jack, jalapeno cheddar, and tomato-basil comes with everything pre-sliced in 1/2-oz slices. Two of those, or a 1-oz serving, has 4.5 grams of fat and 2 points.
One of the staples of this household is cheese quesadillas. I bought the current batch of tortillas before I resumed the practice of scrupulous label-reading, and they are four points each. But with a single 1/2-oz slice of Cabot's jalapeno cheddar, carefully torn and placed on 1/2 the tortilla, which I then folded in half and heated, I had a quesadilla to rival the full-fat versions eaten by the rest of the family. And at only 5 points total, I still had room for dessert.
